Fried 1.5 lb of breaded chicken, making orange chicken.  Weighed the oil before and afterwards.  Only 1.5 oz were absorbed, which isn't bad at all: 360 calories. _

Cheese Spinach Soufflé!  Silicone bread pans work amazingly for soufflé.  I was able to just turn it right out of the pan and slice it up.   I think I liked the jalapeno cheddar in the souffle, but it was rather unsubtle.  I wonder if I could make a caramelized onion soufflé. _

Trying again to open the windows.  It really isn't warm enough, but it's the principal of the thing.  I may be shivering, but at least the air is fresh.  Or, anyway, different.  Varieties of experience and all that. 

I'm thankful that the cat hasn't realized he could almost certainly get through these screens with a more systematic approach.   _
