The trouble with breakfast burrito-type dishes is they always come out watery. Any thoughts? I think the water is coming primarily from the scrambled eggs. The whole point of the way I cook scambled eggs is to trap the steam and get fluffy eggs. Steam turns to water, which is why all scrambled eggs end up sitting in puddles if you put them in a closed container like a tortilla. Leaving out the milk would be an obvious first step, but I know from making Macdonalds breakfast burritos (which are also often damp) that it isn't enough. The key to a 'good' macdonalds breakfast burrito was to let the eggs go cold, drain them, then mix them up with the rest and wrap them. They then sit, wrapped, in the refrigerator all morning, waiting to be microwaved, sorry, Q'd, just before serving. Scrambled eggs are wet things. I think if I treat it more like an omelet, and cook the eggs slowly without any stirring, like macdonalds biscuit eggs. Also, maybe I should cook down the salsa along with the sausage. I'm not sure whether to add diced onion. On the one hand, it could use the flavor, but on the other, onions are a definite source of liquid. And caramalizing them falls outside the scope of things I can do on my lunch break.
And yes, everything I know about cooking eggs I learned on sunday morning shifts at macdonalds. There was a woman there who could break 4 eggs at a time without damaging the yolks. 2 in a hand. Amazing. Also, perfect poached eggs require serious technology. You put the eggs in these things like crumpet rings on the burger grill, turned down, and there is a lid that slowly drips water onto the grill, steaming them. Much better than what I can do at home.

Ah, yeah. So, Ratatouille is one of the best films I've ever seen. Easily the best Pixar movie. I've also got a theory about it, but it isn't a theory I want people to have in their head as they watch it, so. But you should watch it. Even Erika grudgingly admits that it's a good movie. She struggled with the sincere bits, because she's a hopeless grump, but she's a good person anyway.
